Summary/Abstract: The main purpose of the paper is presentation of the Servqual method and its use in the research of the quality of restaurant’s services. The paper presents the results of research on the quality of services in selected cafés in the city of Lublin, which was conducted in December 2014. Practical implication of this method to assess the quality of services takes into account primarily customer satisfaction. It becomes a simple way to obtain clear conclusions on issues related to the adjustment of the services to customers’ requirements.
