La gastronomie comme moteur de dynamisation économique de la Communauté Autonome du Pays Basque : étude des stratégies de développement
This study illustrates how the autonomous community of the Basque Country has successfully endorsed its gastronomy as a cornerstone of Basque identity, through the transmission of values and culture but also as a driving force for economic development, particularly in terms of tourist attraction. This process is also part of a political strategy aiming at evolving from local to global.
