Summary/Abstract: The article presents the toxic chemical substances that are formed as a result of thermal treatment of foods, carcinogenic character. Factors that contribute to the accumulation of carcinogenic chemical substances in different food groups are discussed. Methods for reducing chemical carcinogenic chemical substances in food products are discussed.
