Summary/Abstract: This article has been withdrawn as of 10.01.2022. Çalı beet eatings is the name of one of the soup varieties that make up the food culture of Gölbaşı district of Adıyaman province. This soup is made from a poisonous herb that grows naturally in winter, known as wild beet, and is widely consumed in the winter months in Adana, Osmaniye and Kahramanmaraş provinces. The aim of this study; It is to examine the food culture made from a plant called beet, bush beet or tirşik. Considered as a gastronomic heritage, this plant really constitutes the main ingredient of borscht made in the winter months in the region. Beetroot soup is considered as a source of healing by the people living here and it is believed that this soup is good for many diseases.
