Summary/Abstract: The presence of smell in culture is obvious: on one hand there are scents of food in restaurants and perfumes, on the other hand, there are rotting wastes and sewage. The smell is a way of expressing identity. The authors present the term of ‘osmosociology’ as a theory of building the social and culinary order based on the sense of smell.
