Summary/Abstract: This paper examines and identifies the changes in arrangement and regional specialization of food industry in Polish voivodeships. An analysis was made basing upon employment structure changes as well as the change in food industry output in the regional system and the concentration changes were defined by an analysis of Florence specialization coefficient. Two voivodeships were characterized by the highest share in both employment and output of food industry: Mazovia, and Great Poland (Wielkopolska) and the following voivodeships were next: Silesia, Małopolska, Łódź and Kujawsko-Pomorskie. The following voivodeships are characterized by regional specialization within food production: Podlaskie, Lubelskie, Mazovia and Warmińsko-Mazurskie.
