Summary/Abstract: The COVID-19 pandemic in 2020 caused a profound macroeconomic crisis that forced the HoReCa sector (hotels, restaurants, catering) to fundamentally redefine its business model. The aim of the article is to identify adaptation strategies of enterprises in this sector and assess changes in consumer behavior in the post-pandemic period, with particular emphasis on the relationship between customer expectations and business constraints. Within the research work, a pilot study was conducted with an exploratory character using the CAWI method on a sample of 116 respondents (consumers and entrepreneurs) representing urban and rural areas in Poland. The main findings point to the emergence of a technological-economic paradox: while entrepreneurs should invest development in automation and AI for consumers deciding on choice criteria, price remains the main limitation of based innovation strategies, and those not striving to reduce costs for the client. The research suggests that the key to recovery of the sector is price elasticity and the development of hybrid delivery models, and not exclusively offering premium services.
