Summary/Abstract: The purpose of this paper is to systematize models for menu analysis for the restaurant business and to apply a suitable toolkit on the basis of which to implement menu engineering as a tool for maximizing revenue and optimizing profitability. In the first part of the study, the meaning of the menu in the restaurant is considered. In the second, existing models for analysis are systematized and presented. The third part explores the applicability of menu engineering to menu analysis in the context of revenue management. In the fourth part, the model most suitable for the purposes of scientific development is selected and, by means of specialized software, it is tested in two comparable restaurants, by means of a mathematical algorithm. Based on the results obtained from the practical research, conclusions have been drawn and recommendations have been formulated aimed at management, with a view to increasing the profitability of menu items, optimizing revenues and increasing the competitiveness of restaurant enterprises.
