Summary/Abstract: The presented paper considers the latest research on the chemical composition and their extraction from the natural sweetener called stevia /STEVIA REBAUDIANA B/. This plant is introduced to a number of areas around the world due to the content of natural sweeteners i.e. stevioside and rebaudeside in its leaves. Most of the glycosides are biologically active substances and are not a source of calories. Steviol is the basic building element of glycosides. The majority of glycosides are diterpene glycosides, mainly stevioside and rebaudiside A and small amounts of rebaudiside B; C; D; E, dulkoside-A and B, steviolbioside. Stevioside and rebaudioside A (P-A) constitute over 95% of the total quantity of sweet substances. Of the entire group the highest content in the leaves of stevia is that of the substance called stevioside due to which stevia is popularized. A way of extracting sweet substances from stevia is pointed out in the paper.
