Summary/Abstract: Collagen is the main structural protein of the human body, representing approximately one third of all proteins, with an important role in maintaining the integrity and functionality of connective tissues, present in the skin, bones, cartilage, blood vessels and other components of the extracellular matrix. The dynamics of collagen can be followed by analyzing the processes of biosynthesis, maturation, degradation and regeneration, highlighting the importance of the balance between these stages for tissue homeostasis. Collagen imbalances can be observed in various pathologies, such as osteoarthritis, osteoporosis and skin aging, but also the therapeutic perspectives offered by the use of collagen in regenerative medicine and nutrition.
