Summary/Abstract: Artificial intelligence (AI) is based on the development of algorithms and calculation models with which computing systems can process and analyze large amounts of data, make predictions and make decisions based on these analyses. AI has also proven useful in the food processing sector. This paper provides a review of an emerging field in the food processing sector, referring to quality and safe food supply chains, controlled by AI to avoid human error. It has the potential to revolutionize the food sector in several ways, including increasing food quality and food safety. The field is of great significance from economic, food safety and public health points of view. The application of artificial intelligence is hindered by social and economic barriers. These barriers can be overcome by disseminating good practices among the participants of the food supply chain. By using the AI-based system, food production and online delivery processes can be efficiently handled.
