Summary/Abstract: Currently innovation plays an important role in the socio-economic development as a result of the ongoing process of globalization, increasing customers expectations and strengthening competition. Service organizations such as food service companies, must to remain on the market-oriented development are required to continual innovation activity. Innovations simplify all changes introduced by gastronomy business, regardless of the fact that they are absolute novelties, reproduced by the competitors or adapted products or services. The article aims to show innovation in terms of offer (product/services), organization, marketing and process in gastronomy market and is analyzed as a factor constituting the competitiveness of food service companies.
