Summary/Abstract: Aim of the article: characteristic of the role of economic determinants in the area of consumption of food in households in the regional aspect in Poland. Particularly there were characterised the basic macro- and microeconomic factors affecting population’s preferences in the area of food consumption such as per capita GDP, the level of wages and incomes of the population. Next, there was carried an analysis of correlations between the economic determinants and the level of consumption of foodstuffs. Material and methods: to achieve the goal the authors used the recent data from household budget surveys, statistical yearbooks and other original materials. The analysis covered sixteen provinces in Poland. To assess the relationships between the economic factors and the level of consumption of food products they calculated the correlation coefficients. Main research findings: income is an important factor affecting the level and structure of meeting food needs. In the provinces with a high level of economic development and population’s income, there are substantially more consumed food products received in result of processing primary materials and enabling consumers immediate consumption or fast meal preparation. On the other hand, in the provinces with a lower level of economic indices, there are consumed more products of the basic character such as bread, flour, milk, eggs or sugar. Practical and social implications: the carried out research findings show that regional differences in the economic situation of households affect the level and pattern of consumption of foodstuffs what in consequence may be reflected in the energetic structure of diet or food security of the population.
