Summary/Abstract: The article analyses certain symbols of oriental cuisine, with special attention being paid to boza. Through this drink it is possible to determine the typology of factual and symbolic roles of oriental cuisine influences in the socio-cultural discourse of the Balkan peoples. Attention is paid to the question, how the modern concept of national cuisine in the Balkan conditions of the 19th century was shaped in opposition to the universalism of the Ottoman-oriental everyday life, and what place boza and other symbols of oriental cuisine occupy in the context of emancipatory programs of the national movements. The fact that many of these oriental lifestyle symbols survived the nation-building processes and remained characteristic symbols of cultural identification, transforms the boza in a distinct semiotic category. In the collective consciousness of the Balkan peoples, boza is thus a specific model for ethnic identification, while also contributing to the mental definition of a supra-ethnic cultural community.
