Summary/Abstract: Bananas are fruits that are distinguished by good nutritional value, being of great importance to consumers, as they are a valuable source of vitamins (B6, C), potassium, sugars (glucose, fructose and sucrose) and fiber, which makes them a source of energy. The aim of this study is to investigate the influence of edible coatings on the quality of bananas. The study found that edible coatings with different compositions influence and preserve the quality of bananas according to various physicochemical parameters under different storage conditions, which proves the important importance of edible coatings for the studied fruits
