Summary/Abstract: The ubiquitous use of synthetic packaging leads to serious environmental problems associated with their slow degradation. This necessitates the use of biodegradable edible coatings that restrict the use of synthetic packaging. Edible coatings retain quality and prolong the storage period of fresh fruits and vegetables. The purpose of this study is to investigate the sensory properties of carrots covered with edible coatings. The results obtained from the sensory evaluation show that coated samples are better compared to the control sample throughout the storage period according to all indicators - appearance, color, texture, aroma and taste.
