Summary/Abstract: The paper presents the analysis of the selected lexical archaisms from the semantic field “food” preserved in the Silesian ethnolect from the point of view of historical linguistics. The fact that the regional variation of culinary lexis is, despite frequently being analysed by linguists, still not described well enough inspired the author to discuss this issue. The research aim of this culinary lexis study is to present a small portion of lexical archaisms featured in the Silesian ethnolect (for instance warzyć, śniadać, wieczerzać, obiadować, jużynować ( jużyna) and swaczyć (swaczyna)), to show their connection with the culture of the region and to analyse the frequency of use of these lexemes by the current inhabitants of the Upper Silesia. The analysis of lexemes connected with consuming meals shows that the majority of these lexemes became archaic in the Polish language and only a few survived in the modern Polish, mostly in fixed phrases. In the Silesian ethnolect, however, these lexemes did not lose their functional capabilities and constitute a part of the active vocabulary. Analysing the semantic development of these lexemes reveals that the dictionary definition elements of seemingly little importance, contain information instrumental in understanding the linguistic past or leave marks in the modern Polish.
