Summary/Abstract: The role of food in human life and continuous technological progressrequire the creation of an appropriate legal framework guaranteeing protectionof consumer life and health. One of the most important elementsof food safety is the official control system which binds EU law requirementsand institutional autonomy of member countries ensuring theircooperation. A properly functioning system should be characterized bycompetency, efficiency and clarity, and undertaken actions should takeinto account the proportionality and precautionary principle. This purposeis served by numerous rules of a mandatory nature, multiannualcontrol plans, RASFF system and guard institution – EFSA. Thanks to itsdiversity, it is possible to take into account the specificity of individualsectors of food law and ensure comprehensive protection of health andlife of the consumer from farm to fork. At the same time, the traceabilityof products is required to ensure functionality of the system and its flexibilitywith regard to constantly emerging threats.
