Modelling Changes in the Quality Parameters of Food Products in a Product-Packaging-Environment System

Summary/Abstract: The article analyses changes in the quality parameters of products during storage in different storage conditions depending on the initial composition of the mixture of gases in the packaging. The storage test tests the changes in product quality parameters including the index of total sensorial quality, the acid value and the peroxide value. An estimated mathematical model of changes in the quality parameters of products in the product-packaging-environment system is the basis for determining the shelf life of packaged food products.
