Summary/Abstract: This article focuses on the mutton prices in Istanbul in the eighteenth and the nineteenth century, during a period of military failures, internal revolts, and financial crises that made the subsistence of Istanbul essential for the state more than ever. It investigates the fluctuations and changes of the mutton prices over the years and the profit rates of the butchers in a context where the state was trying to meet society’s needs by setting a fixed price (narh). The primary source of the study is the 201st sharia registers of the Istanbul Court. The lists in this record give important information for the prices of goods and the formation of prices. They show periodic fluctuations in the prices of sheep meat, together with sharp increases from the beginning to the middle of the nineteenth century. The government, in this situation, tried to manage the issues of pro-curement, pricing, and distribution with economic interventionism to prevent a shortage and to supply meat at reasonable prices.
