Summary/Abstract: In the end of the 19th century, in a socio-political context in which bio-political concerns of the state are combined with an interest for children, school meals become a topic of debate between various professional groups (doctors, teachers). Assimilated by the state in the process of governance, these professionals define a food model (the amount of food and the types of products recommended for children), invested with various social and cultural meanings. This paper discusses food practices in urban schools, based on a socio-cultural model disseminated through school. The topic of food will also be analysed taking into account the intersection with the school space model developed at the end of 19th century, following to what extent this model includes spaces especially designed for food preparation and serving.
