Summary/Abstract: Today, the importance given to eating and drinking has increased in the world countries compared to the past. . Food and drinks of the region prepared in the region where it is located reflect the cultural characteristics of the region. The contribution of local dishes to the region is also important in terms of tourism marketing. Turkish cuisine, Turkey can continue to live in the soil, which emerged with a kitchen extending to accumulate up to Central Asia. The multicultural structure of Turkish cuisine from past to present has contributed greatly to the development of this cuisine. All regions in our country have their own cuisine culture, cooking tools and methods. Local products grown in the regions; The climate, lifestyle, and culture of the region have had a major impact on shaping the local dishes that have formed in the region. Local kitchens have an important place in the promotion of their region. Our dishes cooked in our local cuisine, which is our cultural heritage passed down from generation to generation, and the original cooking methods are in danger of being lost. In this study, Bolu local cuisine has been examined in terms of local dishes.
