Summary/Abstract: The paper sets out to analyse the role of culinary tourism in local and regional socio--economic development. It briefly reviews the origins and the growing popularity of culinary tourism in Europe, with particular emphasis on its creative and regenerative aspects in rural settings. Culinary tourism is presented as an opportunity for the redevelopment of the Polish countryside basing on a review of the existing culinary resources and selected cases of good practice. The paper concludes with a set of recommendations and suggestions for further improvements in this field in Poland.
