Summary/Abstract: The field research was focused on transformations and changes of traditional folk diet in Giant Mountains, Upper Jizera region, during the 20th century to the present day. The traditionalprocess of producing food, cooking and transferring the knowledge as well was researchedin both czech and remaining german families, showing not only the differences, but also thediffusion between the both cultures. Everyday and festive cooking has been analysed during thefield research with focus on fading or preserving of the traditional food as the potato flat cakes,sweet mushroom christmas dish or the traditional red cabbage processing. The cabbadgefarmers had a great influence on the local food culture and their fates during the communistperiod as well as their present efforts were also investigated. Spreading of common czechchristmas dishes into the region and their coexistence with local traditions has shown a strongposition of the traditional folk cousine of the region.
