Summary/Abstract: Objective – The aim of this study is to determine the relationships between the personality traits and individual innovation behavior of the chefs working in the hotel kitchen and to investigate the mediating effect of individual innovation perception dimensions between these two variables. Design/methodology/approach – The research population consists of 281 cooks working in four and five star hotels in Bursa. A total of 220 usable questionnaires were obtained from the 246 questionnaires, after removing the ones containing extreme values and high amount of missing data. Five factor personality traits inventory, individual innovation perception and individual innovation behavior scales were used in the study. Cronbach's alpha reliability coefficient and explanatory factor analysis were applied to the scales used. In line with the information obtained from the literature, a total of 4 hypotheses were established and these hypotheses were tested by Pearson correlation and multiple regression analyzes. Results – It was found that the five factor personality traits with openness and the neuroticism had a significant effect on individual innovation behavior. Individual innovation behaviors of cooks who show more openness are positive, while those with neuroticism have negative effects. Other personality traits do not have a significant effect on individual innovation behaviors. Also; it was concluded that only positive individual innovation perception mediates the relationship between five factor personality traits and individual innovation behavior. Discussion – The results show that similar results have been achieved with the literature. The positive individual innovation perception shows that the perception of innovation should be taken into consideration in the innovative behaviors expected from the cooks by showing the partial mediating effect of the five factors personality traits and individual innovation behavior relationship.
