Summary/Abstract: The objective of this paper was to indicate the physicochemical and quality properties of walnut oil after solar heat and air exposition for two summer months. In fresh and oxidised oil, ten quality indicators were determined: the peroxide value, anisidine value, acid value, iodine value and Totox index, fatty acid profile, refraction index, polar compounds, color and viscosity. A large increase in the values of peroxide, anisidine, acid, the Totox index and the content of polar compounds was observed after the oil oxidation under atmospheric conditions. A simultaneous decrease in the iodine value and the deterioration of colour was observed, while the physico-chemical properties of walnut oil such as density, viscosity and refraction index did not change. The results show that walnut oil is highly susceptibile to oxidative processes initiated by atmospheric oxygen, wetness and the solar heat exposition.
