Summary/Abstract: The author presents, first, the role of the famous Maison Capşa in the Bucharest landscape of the beginning of food preparations. Similarly, the role of the founder of the House, Grégoire Capşa, was noted as regards the lack of competition for his products during the last two decades of the 19th century. The author then presents the economic demonstrations, including the exhibitions of the Romanian cooperators of the late 19th century, where Maison Capşa participated as much with its confectionery products as with those in viticulture. As a result of these participations the Maison Capşa has won numerous prizes and medals. Apart from the 1894 exhibition in Bucharest, the author also presents other exhibitions from Romania or abroad. One should note the rich documentation of archives made by the author
