Summary/Abstract: The aim of the study is to analyse and evaluate consumer behaviour in the market of breads with a particular focus on bread with added fibre. The research was conducted in 2014 among 101 people from Warsaw and surrounding areas. Analysis of the material gathered during the survey indicates that the most important factors in the selection of bread were taste and freshness, as well as odour and general appearance. Among the types of information referring to bread label, the most pointed by consumers were: expiry date and composition of the product. Fibre and its presence in the human diet were positively evaluated, and the health benefits of fibre were valued by consumers. Confirmation of the positive feedback about the bread, were statements referring to willingness to pay higher prices for the white bread enriched with fibre.
