Summary/Abstract: Interactions of resveratrol, fatty acid and vitamins: A, D3, E with free radicals were examined. The aim of this work was to compare their antioxidative properties as ability to quenching free radicals. Paramagnetic DPPH was used as the model free radicals. Absorption of microwaves of frequency 9.3 GHz by DPPH and DPPH interacting with the tested samples was determined. The electron paramagnetic resonance (EPR) spectra were measured for DPPH with microwave of 2.2 mW by spectrometer produced by Radiopan Firm (Poznań) and the Rapid Scan Unit of Jagmar Firm (Kraków). Programs to spectral analysis of Jagmar Firm (Kraków) and the program LabView (National Instruments, USA), were used in this study. Interactions of DPPH with the tested samples revealed by decrease of amplitude of EPR line of DPPH. Kinetics of the interactions of the samples with DPPH was determined. It was pointed out that interactions with free radicals decreased in the following order: resveratrol + OMEGA-3+ vitamin E > resveratrol + OMEGA-3 + vitamin A > resveratrol + OMEGA-3 + vitamin D3 > resveratrol > resveratrol + OMEGA-3. The antioxidative properties of all the tested samples were proved. The changes of interactions of resveratrol with free radicals were observed after addition of fatty acids and vitamins to the interacting system.
