Summary/Abstract: This paper deals with the conditions under which taverns, with their primary purpose of serving food and drinks, became the mirrors of social morale, tendencies of authorities to establish total control over their subjects or attempts of oposition forces within the society to gain the position of a respectable political factor. In the age of tran- sition, the catering facilities, although still partially scenes of criminal activities, began to only fragmentarily show the signs of vitality that they had possessed in the times when culture, legitimate citizen rights, and fundamental democratic principles were in a subordinate position in relation to the non-institutional centers of power.
