Summary/Abstract: The aim of this research is to study the viticulture, grape production, and wine culture of Safranbolu in the context of historical, archaeological, and agricultural production, and to reveal its evolution, and changes from the Roman period to the present. The research, which adopted a qualitative research design, used document analysis, and the personal interview method. Observation, and field studies were also used. The historical process of grape production was prepared using documents from the relevant literature, and data obtained by the researchers from field research. Face-to-face interviews were conducted with 12 participants between January, and May 2024 to determine the current state of grape production in the region. In the historical, and archaeological context, the presence of large bunches of grapes, vines, and agricultural tools (vine knives, hoes, etc.) depicted on the facades of rock tombs, especially those from the Roman, and early Byzantine periods, on chamosorion tombstones, and stelae, and on wine work times. The results show that grapes, which have been cultivated in the region for centuries, are of great importance in terms of the regional economy, local cuisine, and theological rituals. In Safranbolu, the villages of Bağlar, Çerçen, Dü zce, Iİncekaya, Konarı, Üçbölük (Ilbarıt), Aşağı Çiftlik, Yukarı Çiftlik, Aşağı Danaköy, Yukarı Danakö y, Sırçalı, and Yazıköy continue to cultivate grapes using traditional methods. Grapes, which were also used in wine production in villages such as Yazıkö y during the Ottoman period, are today generally consumed as table grapes, and used in making vinegar, and molasses. Additionally, a vineyard was recently constructed in the area to make wine.
