Summary/Abstract: The paper discusses the name for green bean pods, but also for a type of dish that can be prepared from a number of other vegetables. The name is associated with Buran bint Hasan ibn Sahl, the wife of the Abbasid caliph al-Mamun (813–833); in her wedding outfit, they say, there was a green carpet decorated with pearls, so buraniyye was originally the name for a dish with sour milk, spinach and rice, which looked like that famous carpet, and according to another version, that dish was invented by Buran herself . It is a special, oriental dish that, over time, will be made from various vegetables, including those newly arrived from America, tomatoes and peppers. The dish is still popular today in the Balkans and (Middle) Eastern regions, as evidenced by the records of ethnologists and the available Dictionaries and Cookbooks, from Spain to Afghanistan.
