Summary/Abstract: A part of the material component of the culinary tradition is represented by the writings about procedures of cooking and the ways of serving gastronomic products and collaborating determinants. In this paper, a content of the notebook from one of the better-known Pirot’s caterers will be presented with the aim to contribute, with such a material, to the theoretical basis for further local food culture research as one of the very important parts of the local and national identities.
