Summary/Abstract: The text is dedicated to Professor Jerzy Makowski on the 50th anniversary of his scientific activity. It is a description of culinary traditions as an element of Cuban culture. It also presents a picture of the presence of this tradition in the Cuban reality of the late twentieth century.
