Summary/Abstract: The right degree of microbiological hygiene of the environment in which food is prepared, produced, packed, transported, stored, served or sold will very much contribute to the fact, that food, when reached the final consumer will be healthy. By implementing hygiene measures based on valid regulations in food related facilities, education measures and insight on the health status of the person dealing with food, every risk in the facilities which contributes microbiological pollution will be reduced to a minimum. The goal of this doctoral thesis was the research of the hygienic conditions from the point of view of microbiological cleanliness of the food related facilities on the territory of Kanton Sarajevo. The research was conducted in 34 feeding establishments in the mentioned area. 104 samples were analyzed through wet smear. The analysed samples were taken from wood surfaces, metal surfaces and from the hands of the facility employees. Out of a total of 104 samples 79 (76%) were valid according to the norms of the applicable regulations and 25 samples (24%) did not meet the norm.
