Summary/Abstract: The successful development of any business is directly dependent on its operational model. This also applies to businesses operating in the field of food and beverage sales in the digital environment. This is due to both the specific features of the products and the accompanying activities for the organization of the warehouse, selection of product range, selection of delivery methods, order solutions and customer service model. The aim of this work is to describe the operational models and bring out their main positive and negative features, while presenting successful global and local examples.
