Summary/Abstract: The inclusion of gastronomy, which is a discipline that examines the relationship between culture and food, in tourism activities brings gastronomy tourism to the agenda. Main purpose of the study is to examine the effect of gastronomy tourism in travels organized for Bolu. In the study, the interview technique was preferred as the data collection method. The data obtained from 10 food and beverage and accommodation businesses and travel agency owners actively serving in Bolu were analyzed via descriptive analysis method. Considering the main results of the research; It is understood that most of the tourists coming to Bolu, come for the purpose of nature and health tourism and the effect of gastronomy tourism on touristic demand is quite low. It has been observed that most of the businesses do not have knowledge about gastronomy tourism such as geographical indication and origin. It is thought that it is very important for the local government to provide support in the fields of promotion and event management in order to develop gastronomy tourism in Bolu and thus to increase the number of travels to be organized.Keywords:
