Summary/Abstract: By direct or indirect contamination, mycotoxins can enter the human and animal food chain. In addition to harmful effects on human and animal health, mycotoxins can have a significant negative economic impact. Due to their stability, mycotoxins remain for a long time in plant and animal products and are potentially a great danger to human and animal health in many countries around the world, especially in developing countries. Therefore, the main goal of this paper is to show the importance of mycotoxin control through the processes of storage, transport, and processing of samples for human and animal nutrition. According to the obtained results, 52% of samples intended for human consumption do not meet the reference values. Mycotoxins were detected in 100% of the tested food samples. A reliable method in the prevention of mycotoxin synthesis is the food safety control system at all stages of production and distribution, which includes good storage practice, good hygiene practice, and good production practice.
