Summary/Abstract: Erbil, as a part of Iraq, is one of the oldest cities in history. Erbil, which experienced its brightest period in the Ottoman period, became the most important science, culture and literature center of its time, as well as its deep-rooted rich architecture and institutions. One of the important elements that draw attention in this rich culture is the women of Iraq Erbil region had contributed to the development and protection of Erbil culinary culture with their local foods. In our study, the culinary culture of the Erbil region has been our main subject. A comprehensive study on the subject has not been conducted so far. In terms of cuisine, Erbil cuisine has a rich culture. It has always shown itself to the whole world with its variety and abundant ingredients and one of the most famous cuisines among Arab countries, especially in Iraq, has been Erbil cuisine. Therefore, the people of Erbil have become a city that has a rich mix of culinary culture from both local and other ethnic groups in its cuisine. In summary, the kitchen is a symbol of civilization. The people of Erbil have cooked all kinds of dishes in various civilization stages. In this context, the great burden of the cuisinehas been fallen on women. Both written and oral sources were used in the study. Domestic and foreign written sources were consulted.At the same time, archives belonging to public or private libraries and foundations were scanned, besides, efforts were made to reach the existing resources of the people concerned, as well as the studies conducted in other countries, especially in Iraq and Turkey.In the context of oral sources, interviews were conducted with Turkmen, Kurdish and Arab families living in districts, villages and towns in and around Erbil.The people interviewed were from different age groups. Interviews were made between the ages of 25-80 for women, and between 35-70 for men. The data that emerged as a result of the interview were deciphered and examined under separate headings.
