Summary/Abstract: The concept of national cuisine is inextricably linked to national consciousness and the formation of national states. While there are many ways in which national cuisine can be represented in culture, the written depiction in cookbooks will be studied in this article. A specific period in Latvian history has been chosen for this purpose: the interwar period following the establishment of the Latvian State. The example of Latvia demonstrates that national cuisine is a set of defined and standardized principles that reflect distinct socioeconomic circumstances as well as State’s views and interests.
