Summary/Abstract: The paper deals with nutriton of the people in the past, starting with the primitive community. Futher follows the geografical and etnological location of Kratovo and its environs, Osogovo and Ovče Pole. Food has been classified into eight subgroups of food having animal origin. А list of food preservatives has been given. Packing is also described. There is also а description of the preserving technology. Drinks are described shortly. Thе most detailed description deals with meat preservation, especialy "раѕtrmа" - smoked mutton meat, which used to be exported to the Balkan countries.
